I had never worked at a place where the coffee service received so much attention. Everything had to be perfect. The bean. The grind. Measuring each batch on a scale. Maybe these are common practices in coffee shops but in a bustling NYC restaurant, I would expect coffee to take a backseat to food and alcohol. To be honest, everything received great attention because the owner wanted everything to be great.
At this job I learned everything there was to know about Peet's Coffee and when we switched brands to Intelligentsia I learned everything about them too.
It was years later during a trip to San Francisco that I saw my first Peet's Coffee stand in real life! I was geeking. I'm sure I have a picture of it somewhere..

In Washington State a brand that has made a name for themselves is Dillanos Coffee Roasters based in Sumner, Washington. Their logo can be spotted in the local grocers around town. They do wholesale and have partnered with shops like local favorite Anthem Coffee to distribute their brew.
